This knife is a really cool update on one of our most popular and requested vintage knives - a Forgecraft Chef Knife. This knife has a length of 245mm (just over 9.5'') and a heel height of 45mm.
Forgecraft Hi-Carbon knives are made out of 1095 carbon steel, which is a "simple carbon steel" that works perfectly in the kitchen. The steel takes a patina very quickly (there is some on this blade already), but the reactivity is only moderate. However, any possible reactivity issues tend to disappear after a nice solid patina has been set. Perhaps the nicest part about 1095 steel is that it takes an unbelievably sharp, yet toothy edge and strops/hones back to scary sharp in no time whatsoever.
The handle was made and mounted by a talented craftsman and chef, named Matt Stephens. Matt's work has been sold on multiple sites, and is used in Europe and North America, by both professional and serious home chefs. This handle, in particular, is what Matt calls a "Coke Bottle" shape. This shape gives a sure grip and is incredibly comfortable in the hand. The materials used for this particular piece are red resin and African blackwood, which are both very durable and beautiful materials.
The overall shape of this knife is very good, used condition, with a few little dings, from use, but nothing major to note. This knife would be an amazing addition to any collector's kit, or better yet, for the chef who appreciates vintage quality with a modern twist!
