Konosuke knives are made by Kaneshige Cutlery, based out of Sakai City, Japan, which is known as one of the premier knife making locations in the world. They are recognized by professionals and enthusiasts alike to be one of the best flat-out performers in the high-end laser/knife world. Konosuke knives always cut like nothing is even in the way of the cutting board, and are made with some of the best kitchen knife steels available.
This particular knife is a spectacular example of Konosuke, and what they are capable of. The steel is their renowned HD steel, which is known as a semi-stainless steel. The benefits of HD steel are that it is capable of getting as frighteningly sharp as carbon steel, in virtually as little time, but is a bit less "high-maintenance". HD steel is much less prone to rusting, than carbon steel, but it will patina into a dull grey colour, over time, and like all high-carbon steels can rust if not treated properly. HD steel is a fantastic semi-stainless, and is hardened to 61HRC. Like all Konosuke knives, this knife will take and hold a beautifully steep edge, and perform like no tomorrow. The handle on this knife is an upgraded Ebony and Maple combination that is both quietly beautiful and incredibly classy.
All the stops were pulled out for this knife, and the new owner is in for a treat! The knife is in very good, used condition, and the blade will be sharpened, polished up with Nevr-Dull, washed, dried and a coat of mineral oil will be applied for transit. I can't imagine this one will last very long.
